Chicken Sausage Jambalaya

This easy one pot meal is great for large families or for entertaining guests! It has a unique flavor while still being healthy!

Ingredients:

  • 4-6 spicy chicken sausage links, cut into 1/2 inch slices
  • 1/2 lb chicken tenders, cut into 1/2 inch slices
  • 1 tbsp olive oil
  • 3 celery ribs, sliced
  • 1 large onion, chopped
  • 2 3/4 c chicken broth
  • 1 can diced tomatoes, undrained
  • 1 1/2 c long grain rice
  • 1 tsp dried thyme
  • 1 tsp Creole seasoning

Directions:

  1. In a large saucepan or Dutch oven, saute sausage and chicken in oil for 5 minutes. Add celery and onions and saute for 6-8 minutes more. Stir in the broth, tomatoes, rice, thyme, and Creole seasoning.
  2. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until rice is tender. Let stand for 5 minutes.

Makes 9 one cup servings.
