I’ve had a lot of people ask about how I plan my meals and what I eat so I thought I’d share a sample menu. Below you’ll find both a complete week’s worth of meals and the template I use when I plan meals for the family.

Prior to changing my eating habits, I had already begun to meal plan. I followed a structured template so that planning meals for a month only took a few minutes rather than hours. You’ll notice that I plan to have tacos, for example, every Tuesday night. That gets boring quickly, so we change it up! We have regular tacos, street tacos, pork tacos, enchiladas, taco soup, taco pasta, chili, empanadas, etc. But when I sit down to plan my menu, I know that on Tuesday, it will be tacos of some kind and that narrows down my choices. Due to my type 2 diabetes diagnosis, I am allowed 180 g of carbs per day, broken into 3 meals and 3 snacks. Meals are 45-60 g of carbs each and snacks are 0-15 g of carbs. If my meal is 60 g of carb, then I cannot have a snack or dessert. Before following my diet, please be aware that each person’s needs are different and I am not a dietician. I am eating as my dietician instructed me, but you may have different needs. According to the Mayo Clinic, a healthy non-diabetic will consume 225-325 g of carbs per day. So your needs may vary greatly from mine. Please talk to your health care team before making changes to your diet!
